Organic Red Cabbage Slaw

Looking for an easy low maintenance side dish this week? Our solution – use the slow cooker.

This Cabbage slaw is perfect for the whole family. Tangy, crunchy, and most of all, a great use for your produce this week! Your Vidalia onion and red cabbage will marry perfectly in the slow cooker. While you dart around with your day, rest assured there will be a delicious dish waiting for you when you return home.

Ingredients (Serves: 4)

  • 1 head red cabbage, chopped
  • 1 Vidalia onion, chopped
  • 4-6 cloves garlic, sliced
  • 6 Tbsp. Red Apple Balsamic Vinegar (or any balsamic)
  • 2 Tbsp. brown sugar
  • 1 tsp. salt
  • Dash of freshly ground pepper
  • 1/4c water

Preparation

Combine all ingredients in a 3-4 quart slow cooker. Cover and cook on low, stirring twice during cooking time, for 6-8 hours until cabbage is tender.

Want a cold version of this slaw? Mix all the ingredients together in a large bowl. Cover with plastic wrap, and put in the fridge for 4-6 hours (or as long as you can wait!). Works just as well for a fresher lighter slaw.
